Recipe #7 - Alias Grace

This recipe is inspired by the scene in which Grace sees Jeremiah (whose alias is now Dr. Jerome DuPont) at the prison governor's home. She is carrying a tray of beautifully arranged slices of pound cake when she spots him across the room - dressed as a well-to-do gentlemen. She is so caught off guard that she drops the tray of cake in surprise. This is strikingly reminiscent of an earlier scene in the book, in which she sees Jeremiah approaching Mr. Kinnear's house, and drops an apron-full of freshly picked garden peas in excitement.

After her clumsy episode with the pound cake, Grace hurries to clean up the mess and save the dessert before it is too ruined for the party guests to enjoy. Later at this gathering, she is hypnotized into a trance by Dr. DuPont (Jeremiah) and questioned by Dr. Jordan about her memories at the Kinnear house. It is here that she finally reveals her most deeply suppressed secrets...

Without further ado, here is the recipe for Dr. DuPont's Pound Cake. May it bring you clarity and good fortune ;) 

Ingredients:

  • 6 ounces of silken tofu (I used Whole Foods 365 Everyday brand)

  • Coconut oil (to grease pan)

  • 1/2 cup vegan butter (I used Earth Balance)

  • 1 1/2 cups sugar

  • 2 cups all purpose flour (or use all purpose gluten free flour, if desired)

  • 2 teaspoons vanilla extract

  • 1 teaspoon almond extract

  • 1/2 cup water

  • 2 teaspoons baking powder

 

Instructions:

  1. Drain tofu, remove 6 ounces from package, and set aside.

  2. Preheat oven to 350 degrees farenheit

  3. Lightly grease a 5 x 9 loaf pan with coconut oil (or any other oil you prefer)

  4. Cream together sugar and vegan butter until light and fluffy.

  5. Gradually add in tofu to the sugar/butter mixture, and mix until well combined

  6. Add 1 (ONE) cup flour and slowly mix until combined (reserve the second cup of flour for step 8)

  7. Add water, vanilla extract, and almond extract and mix to incorporate

  8. Add the 2nd cup of flour and baking powder and mix until well combined and smooth

  9. Poor mixture into greased pan and tap on counter to even out the top (and/or smooth over with rubber spatula until even)

  10. Bake for one hour until the top of the cake is golden brown and it passes the toothpick test (insert a toothpick into the center of the cake and gently remove - it's a pass if it comes out clean!)

  11. Allow to cool, then slice and serve (I like to serve this with vegan whipped topping and fresh berries!)

  12. Enjoy!
