What Alice Forgot - Recipe #4

Alice's banana muffins are famous in her community - they are as healthy as they are delicious, and she even freezes batches so she always has some on hand for when hungry guests stop by unexpectedly.

Ingredients:

  • 2 cups whole wheat flour

  • 2 cups all-purpose flour

  • 1/2 cup white sugar

  • 1/2 cup brown sugar

  • 1 teaspoons ground cinnamon

  • 3 teaspoons pumpkin pie spice

  • 3.5 teaspoons baking powder

  • 1 teaspoon salt

  • 4 overripe bananas

  • 1 teaspoon vanilla extract

  • 1/2 cup canola oil

  • 1/2 cup unsweetened apple sauce

  • 1 cup almond milk

Instructions:

  1. Preheat oven to 350 degrees Fahrenheit and grease 2 muffin tins (I did one muffin tin and one loaf pan)

  2. Mix flour, sugar, pumpkin pie spice, cinnamon, baking powder, baking soda, and salt together in a large bowl.

  3. Add bananas, applesauce, oil, vanilla extract, and almond milk to the dry mixture and mix until all ingredients are incorporated (add nuts, chocolate chips, etc. if desired)

  4. Using a 1/4 cup measuring cup, fill greased (or lined) muffin cups with batter.

  5. Bake for 25-30 minutes (or until the muffins pass the toothpick test)

  6. Serve with jam, vegan butter, apple butter, or simply eat as is.

  7. Enjoy!
