Thanksgiving Series: Corn Pudding (GF)

Ingredients:

  • 1 Tbsp canola oil

  • 1/4 cup corn flour (aka masa harina)

  • 1/4 cup white sugar

  • 1 can creamed corn (16 oz)

  • 1 can sweet corn (16 oz) - do not drain

  • 1 tsp baking powder

  • 1/2 tsp salt

  • 1/4 cup oat milk

Instructions:

  1. Preheat oven to 350°F.

  2. In a medium bowl mix together all ingredients until homogenous

  3. Pour into a greased baking dish (make sure the dish is relatively shallow - like a 9” cake pan)

  4. Bake until the top is slightly golden brown (40 min or so)
