Christmas Series: Chocolate Chip Pecan Cookies
Ingredients:
1/2 cup white granulated sugar
3/4 cup brown sugar
1 tsp salt
1/2 cup vegan butter (I used Earth Balance buttery sticks)
1/4 cup plant-based milk (I used Oatly’s full fat oat milk)
1 teaspoon vanilla extract
1.5 cups all-purpose flour
1/2 teaspoon baking soda
8 oz vegan chocolate chips
1 cup chopped pecans
Instructions:
Mix together white sugar, brown sugar, salt, and vegan butter until combined.
Mix in plant-based milk and vanilla extract until sugar has completely dissolved (batter should be smooth).
Sift together flour and baking soda and slowly mix into the butter/sugar mixture.
Stir in chocolate chips and pecans.
Cover bowl with plastic wrap or a towel and place in refrigerator to chill for at least 30 min.
While the dough is chilling, preheat oven to 350 Fahrenheit.
Scoop the dough with spoon or scoop onto a parchment paper-lined baking sheet.
Bake for 10-15 minutes, or until cookies are browned to your liking. I like them darker than most :)
Enjoy!
