Christmas Series: Chocolate Chip Pecan Cookies
Ingredients:
- 1/2 cup white granulated sugar 
- 3/4 cup brown sugar 
- 1 tsp salt 
- 1/2 cup vegan butter (I used Earth Balance buttery sticks) 
- 1/4 cup plant-based milk (I used Oatly’s full fat oat milk) 
- 1 teaspoon vanilla extract 
- 1.5 cups all-purpose flour 
- 1/2 teaspoon baking soda 
- 8 oz vegan chocolate chips 
- 1 cup chopped pecans 
Instructions:
- Mix together white sugar, brown sugar, salt, and vegan butter until combined. 
- Mix in plant-based milk and vanilla extract until sugar has completely dissolved (batter should be smooth). 
- Sift together flour and baking soda and slowly mix into the butter/sugar mixture. 
- Stir in chocolate chips and pecans. 
- Cover bowl with plastic wrap or a towel and place in refrigerator to chill for at least 30 min. 
- While the dough is chilling, preheat oven to 350 Fahrenheit. 
- Scoop the dough with spoon or scoop onto a parchment paper-lined baking sheet. 
- Bake for 10-15 minutes, or until cookies are browned to your liking. I like them darker than most :)
