Christmas Series: Chocolate Chip Pecan Cookies

Christmas Series: Chocolate Chip Pecan Cookies

Ingredients:

  • 1/2 cup white granulated sugar

  • 3/4 cup brown sugar

  • 1 tsp salt

  • 1/2 cup vegan butter (I used Earth Balance buttery sticks)

  • 1/4 cup plant-based milk (I used Oatly’s full fat oat milk)

  • 1 teaspoon vanilla extract

  • 1.5 cups all-purpose flour

  • 1/2 teaspoon baking soda

  • 8 oz vegan chocolate chips

  • 1 cup chopped pecans

Instructions:

  1. Mix together white sugar, brown sugar, salt, and vegan butter until combined.

  2. Mix in plant-based milk and vanilla extract until sugar has completely dissolved (batter should be smooth).

  3. Sift together flour and baking soda and slowly mix into the butter/sugar mixture.

  4. Stir in chocolate chips and pecans.

  5. Cover bowl with plastic wrap or a towel and place in refrigerator to chill for at least 30 min.

  6. While the dough is chilling, preheat oven to 350 Fahrenheit.

  7. Scoop the dough with spoon or scoop onto a parchment paper-lined baking sheet.

  8. Bake for 10-15 minutes, or until cookies are browned to your liking. I like them darker than most :)

  9. Enjoy!
