On a fine winter’s day, Jo finally gets up the courage to throw a snowball at Laurie’s window to get his attention. When he opens the window, they make plans for Jo to visit and keep Laurie company while he is stricken with a cold. Before Jo visits, she gathers goodies from her mother and sisters to bring the poor sick boy - one of which is a Blanc Mange made by Meg and decorated with flowers by Beth. Jo tells Laurie it’s the perfect food for a sore throat as it’ll “slip down” easily. Blanc Mange is usually prepared in a fancy pudding mold, but as I have none, I used cups, and decorated with berries for as fancy an effect as I could muster :)

This is a very simple vanilla pudding made with oat milk (almond milk would also do nicely) that is at once comforting and, at least for me, nostalgic for the Jell-O pudding cups of my youth.

Ingredients:

  • 2 cups oat milk (I used Oatly full-fat for the creamiest possible effect)

  • 1/2 cup granulated sugar

  • 1 tsp. vanilla extract

  • 5 Tbsp corn starch

  • 3 Tbsp cold water

Instructions:

  1. Mix corn starch with water until a homogeneous paste and set aside.

  2. Heat oat milk in medium saucepan over medium-high heat, and whisk in sugar. Cook until milk begins to steam.

  3. Add vanilla and stir, reducing heat to medium.

  4. Slowly whisk in corn starch-water mixture and cook until milk is thickened.

  5. Pour equally into cups and cover with plastic wrap or cloth.

  6. Chill in refrigerator until cooled and set.

  7. Serve with berries and/or granola topping.

  8. Enjoy!
