Throughout Little Women, the family housekeeper, Hannah, consistently and lovingly prepares hot, fresh turnovers to the girls for a quick breakfast to warm their hands (and hearts!) on their long walks to work or school.

I am not the best with pastry, so I took the easy way out and used phyllo dough!

BONUS RECIPE —> Apple Pie-Tini!

Pro tip: save the juices you squeeze from the sugared/spiced apples to make a quick and delicious cocktail (or mocktail, as the March family in Little Women certainly did not approve of alcohol consumption).

Ingredients:

(This recipe makes 6 pastries)

  • 1 package phyllo dough (check ingredients to make sure it’s vegan!)

  • 4 granny smith apples

  • 1.5 cups sugar

  • 1 tsp. lemon juice

  • 1/2 tsp. cinnamon

  • 1/2 tsp. nutmeg

  • 1/2 tsp. ginger

  • 1/2 tsp. salt

  • 1/4 cup melted vegan butter to brush on the pastry (I used Miyoko’s)

Instructions:

  1. Line 2 baking sheets with parchment paper.

  2. Unfurl dough on a large, clean surface. With kitchen sheers, cut the dough into 6 rectangles.

  3. Place the rectangles on the baking sheets.

  4. Peel and core the apples. Shred them with a food processor (use the large shred attachment), orif you don’t have a food processor, use a box cheese grater.

  5. Add the shedded apple to a mixing bowl stir in sugar, cinnamon, nutmeg, lemon juice, and salt. Stir until apples are well coated.

  6. Put a colander inside a large mixing bowl. Place sugared/spiced shredded apple mixture into colander and press down with a wooden spoon to extract as much liquid as possible! (Save the juices that collect in the bowl to make a delicious drink)

  7. Preheat oven to 375 degrees Fahrenheit.

  8. Place 2 Tablespoons of filling in the middle of one of each phyllo dough rectangle.

  9. Brush melted vegan butter on the phyllo dough to help seal the pastry together when you fold it over.

  10. Fold the pastry and pinch the edges, forming a square-shape.

  11. Brush each pastry with melted butter.

  12. Bake for about 30-35 minutes until golden brown.

  13. Sprinkle powdered sugar and cinnamon on top, and serve warm.

  14. Enjoy!
