Kourabia: Armenian Almond Shortbread

Kourabia: Armenian Almond Shortbread

Ingredients:

  • 1 cup vegan butter (Earth Balance is best for baking)

  • 1/2 cup sugar

  • 2 cups flour

  • 1/2 tsp salt

  • 1 Tbsp vanilla extract

  • 1 tsp almond extract

  • 1/2 cup blanched almond pieces (+ more to decorate)

  • 1/4 cup unsweetened almond milk

Instructions:

  1. Preheat oven to 325 F and line 2 large cookie sheets with parchment paper.

  2. Cream together butter and sugar in the bowl of a standing mixer.

  3. Mix in flour and salt, followed by almond extract and vanilla extract.

  4. Place your blanched almonds in a food processor and pulse until finely ground.add to your dough along with almond milk and mix until well combined.

  5. Roll the dough into little balls and place on a parchment-lined baking sheet.

  6. Press each dough ball down with a fork and then decorate with blanched almonds.

  7. Bake about 25 min, or until your cookies are lightly browned.

  8. Enjoy!
