Quarantine Recipes: Vegan Dalgona Coffee
I have seen this ALL over the internet recently.. so here is a vegan version! It is originally Korean, although my friend says it’s totally Indian… either way it is new to me!
Ingredients
2 Tbsp instant coffee
2 Tbsp sugar
2 Tbsp boiling water
a sprinkle of cinnamon (about 1/2 a tsp-ish)
1 cup plant-based milk (I used unsweetened vanilla almond milk)
A couple ice cubes
Instructions
To the bowl of a standing mixer, add instant coffee, sugar and boiling water.
Turn the mixer to a high setting and whip for about 2 or 3 minutes.
Test consistency with your finger or a spoon - it shouldn’t be liquid. It should be more like meringue.
Using a hand mixer or stand mixer, whip on one of the higher speeds.
Add milk to a cup and add ice cubes.
Spoon whipped coffee on top (This is when you take a pic! lol).
Stir vigorously until pretty incorporated, so it is drinkable ;)
