Summer Series: Guacamole

I have never met anyone who doesn’t like guacamole, but I feel like my husband and I eat waaaaay more than the socially accepted amount (whatever that may be). We go though avocados like there is no tomorrow. And I am ok with that. Simple to make, delicious, and nutritious (healthy fats! What could be better?!), guac will always be a staple in our household. We put it on every sandwich, wrap, burger, etc. and even dip our fries in it. It’s just divine ambrosia and we can never get enough.

Ingredients:

  • 3 ripe avocados

  • 1/2 white onion, diced

  • 1 jalapeno, diced

  • 1 handful cilantro (1/2 cup), chopped

  • Juice of 1 lime

  • 2 cloves garlic, minced

  • Salt, to taste

  • 1/2 tsp cumin - optional

Instructions:

  1. Scoop out avocados into a large bowl.

  2. Add onions, jalapeno, cilantro, lime juice, salt, garlic, and cumin (if desired) and mash with a potato masher or fork until avocado is fully broken up into a paste.

  3. Continue stirring, adjusting spices to your taste, until fully mixed.

  4. Serve with tortilla chips or on a sandwich/burger/etc.

  5. Enjoy!
