Grilled Cheese is undoubtedly an American kid’s classic, and in the book, Briar is fond of them as well. She is also a fan of pears, so I added those on the side. My one-year-old daughter is a big fan of this dish as well, and proceeded to eat most of it when I finished taking pictures!

“All the other girls are very shy and graceful, but Briar is always yelling that she wants a grilled cheese and shit. Next week is our last class. It’s a Halloween party and we’re very excited about it.” — (Excerpt from Ch. 7)

This recipe is based on the Vegan Grilled Cheese by Tasty.

Ingredients:

  • 2/3 cup raw, unsalted cashews

  • 1 small carrot (or 1/2 a medium carrot), sliced

  • 2 Tbsp nutritional yeast

  • 2 Tbsp corn starch

  • 1 tsp lemon juice

  • 1 tsp salt

  • 1/2 tsp agar agar flakes

  • 1/2 tsp garlic powder

  • 4 Tbsp vegan butter (+ more to butter your bread)

  • 1 cup oat milk

  • 8 slices white bread

Instructions:

  1. In a pot over high heat, boil 4 cups of water. Add raw cashews and carrot slices and boil until carrot is tender (about 8-10 min).

  2. Transfer cashews and carrot to the bowl of a food processor using a slotted spoon. Save about 1.25 cups of the cooking water and set aside.

  3. Add nutritional yeast, corn starch, lemon juice, salt, agar agar, and garlic powder, and 4 Tbsp vegan butter to the food processor and process while slowly pouring in your reserved cooking water from the top. Process until smooth and well mixed.

  4. Pour this mixture back into the pot turn heat to medium. Add oat milk and stir constantly with a spatula until all oat milk is absorbed and the sauce is thickened. Remove the from heat and set aside.

  5. Butter your bread slices and add to a nonstick skillet. Cook over medium until bread begins to brown.

  6. Use a spatula to spread some cheese sauce on top of your bread. Top with another slice of bread, and flip. Cook until the bottom of the bread is golden brown.

  7. Repeat with the remaining ingredients, slice your sandwiches, and serve.

  8. Enjoy!
