Christmas Series: Marinated Portobello Mushroom "Steak"

Ingredients:

  • 4 large portobello mushroom caps, cleaned

  • 1 cup red wine

  • 3 Tbsp. olive oil

  • 5 cloves garlic, minced

  • 1/4 cup soy sauce

  • 4 Tbsp. balsamic vinegar

  • 3 tsp. rosemary, either fresh and chopped or dried and crumbled

  • 1 tsp. liquid smoke

Instructions:

  1. In a large mixing bowl, whisk together wine, olive oil, garlic, soy sauce, vinegar, rosemary, and liquid smoke. Add mushrooms, cover bowl with lid or plastic wrap, and marinate in fridge for at least 30 minutes.

  2. Preheat oven to 375 degrees Fahrenheit and grease a large casserole dish or cake pan.

  3. When oven is preheated, transfer mushrooms (and liquid!) to casserole dish/pan. Cover dish with aluminum foil (or oven-safe casserole lid) and bake for 40 minutes

  4. Enjoy alongside your favorite potatoes! (Try them with these garlic mashed potatoes or these creamy scalloped potatoes)
