Queenie: Caramelized Mushroom and Onion Pizza

“Everything okay?” Darcy asked quietly, knowing how little I liked being the focus of attention.
“Yes, all fine.” I looked down at my pizza and began to cut into it slowly. Trust my appetite to start waning at the dinner to benchmark my getting better.
“Oh, hello you!” I heard my mum squeak, my eyes still fixed on a piece of mushroom that looked particularly challenging. “Don’t you look well, Cassandra? You’ve really blossomed since I last saw you. - Excerpt from Queenie, ch. 30

Ingredients:

  • 2 Tbsp olive oil

  • 5 cups assorted mushrooms of your choice (I used a blend of mostly shiitake and button that had some portobello as well as lions mane, oyster, and enoki), chopped

  • 2 onions, chopped

  • 1 Tbsp sugar

  • 1/2 cup water

  • Salt, to taste

  • Pizza crust of your choice (I used a ready-made frozen vegan thin crust, but use this dough recipe if you want to make it from scratch!)

  • 1/2 cup vegan mozzarella cheese (+ more if you like!)

Instructions:

  1. In a large pan, heat olive oil over medium heat.

  2. Add mushrooms and onions and saute until onions are clear and soft.

  3. Add sugar and water and stir well. Cover, and reduce heat to medium-low. Cook for about 30-45 min, stirring every 5 min or so until onions have turned a nice deep caramel color.

  4. Stir in some salt, and taste. Adjust salt to your preference.

  5. Spread over pizza dough and sprinkle vegan cheese over top.

  6. Cook according to dough instructions! Since I used a pre-made thin crust, I cooked it at 400 degrees Fahrenheit for 8 minutes.
