For my third recipe I made a cinnamon spice syrup (roughly based on Starbucks’ cinnamon dolce latte syrup) in order to create my version of Spice Coffee, a drink that is mentioned constantly throughout the book.

Servants began putting plates of food on the table at the Duke’s gesture releasing them — roast desert hare in sauce cepeda, aplomage sirian, chukka under glass, coffee with melange (a rich cinnamon odor from the spice wafted accross the table)… — Dune, Book 1

From the cup arose the aroma of spiced coffee…She drained the cup, feeling the energy and lift of its contents — hot and delicious. — Dune, book 3

Ingredients:

  • 1 cup water

  • 1/2 cup brown sugar

  • 1/3 cup white sugar

  • 1 Tbsp vanilla extract

  • 1 Tbsp cinnamon

Instructions:

  1. To a small saucepan, add water, brown sugar, white sugar, and vanilla, and heat to a low boil over medium heat.

  2. Once boiling, remove from heat and whisk in cinnamon.

  3. Let cool, and pour into a jar for storage.

  4. Add 1-2 Tbsp to a cup of coffee whenever you want to experience the wonder of melange ;)
