Dune: Pongi Rice Pudding

On the torrid desert planet of Arrakis (aka Dune), there isn’t enough water for rice paddies or rice production of any kind. So when the Lady Jessica serves a rice dish to her noble guests during the Atreides’ first official dinner party as the leaders of Arrakis, it is a deliberate display of power. Any rice on Dune has had to have been imported from Caladan, the “paradise planet” from whence the Atreides family comes.

“Shall we have our dessert now?” Jessica asked. “I’ve had our chef prepare a Caladan sweet: pongi rice in sauce dolsa.” — Dune, Book 1

Ingredients

  • 1.5 cups basmati rice

  • 1/2 cup white sugar

  • 3 tsp vanilla extract

  • 7 cups almond milk (unsweetened)

  • 1/4 tsp salt

  • Cinnamon, to serve

Instructions

  1. Thoroughly rinse rice, and place in a large saucepan.

  2. Stir in sugar, vanilla, salt, and 1.5 cups almond milk.

  3. Simmer over low for about 7 minutes, stirring every minute or so to ensure rice doesn’t stick to pot. Slowly pour in 5 more cups almond milk, one cup at a time, stirring well in between cups.

  4. Continue cooking on low for 30 minutes. The pudding should be thick and creamy by this point.

  5. Take off heat and let cool. When cooled to your desired serving temperature, pour in the last cup of almond milk and stir well until incorporated.

  6. Serve with a sprinkle of cinnamon on top and enjoy!
