Summer Series: Banana Bread

Summer Series: Banana Bread

Ingredients:

  • 3 medium-large bananas, past ripe

  • 1/2 cup vegan butter, softened

  • 1/4 cup oat milk

  • 1/4 cup brown sugar

  • 1/4 cup unsweetened apple sauce

  • 1 tsp cinnamon

  • 2 tsp vanilla extract

  • 2 cups + 2 Tbsp flour

  • 1 tsp baking soda

  • 1/4 tsp salt

  • 1/2 cup chopped pecans (or walnuts) + extra for decorating, optional

Instructions:

  1. Preheat oven to 350 degrees Fahrenheit. Grease an 8x5 inch loaf pan and line with parchment paper.

  2. In a large mixing bowl, cream together bananas, vegan butter, oat milk, brown sugar, apple sauce, cinnamon, and vanilla extract.

  3. Slowly add in flour, baking soda, and salt until a homogeneous dough is formed.

  4. Stir in nuts (if desired).

  5. Pour batter into prepared pan, sprinkle top with cinnamon, and decorate with nuts.

  6. Bake for 40 min and then cover with foil (so as not to burn the nuts on top). Return to oven and bake for an additional 15-20 more minutes, or until an inserted toothpick comes out clean.
