Summer Series: Mojito Pops

It has been extremely hot and humid here in VA and the air conditioning is struggling to keep up. Our baby pool out back helps a little, but no baby pool lounge sesh is complete without a frozen popsicle treat! This one is strictly for Mama and Grandma.

This recipe makes 6 pops.

Ingredients:

  • 1/2 cup fresh mint leaves

  • The juice of 1 lime

  • 1/2 cup sugar

  • 2/3 cup white rum (10 fl oz)

  • 1.5 cups club soda

Instructions:

  1. Blend all ingredients except club soda in a blender until completely mixed.

  2. Pour in club soda and stir with a wooden spoon. Taste and adjust ingredients to fit your tastes!

  3. Pour into silicone popsicle forms (I got mine here)

  4. Freeze for 6 hours at least… I tried to take mine out too early and cracked one.

  5. Remove from molds and enjoy!
