Fall Series: Vegan Meatloaf

Fall Series: Vegan Meatloaf

Ingredients:

  • 1.5 lbs plant-based ground “beef” (I used Impossible brand)

  • 1 large onion, chopped

  • 3 cloves garlic, minced

  • 1/4 cup oat milk (unsweetened)

  • 3/4 cup oats (quick oats or old fashioned oats)

  • 2 flax “eggs” (Combine 2 Tbsp flax seed meal with 5 Tbsp hot water, stir and let sit until goopy)

  • 2 tsp soy sauce

  • 1 tsp apple cider vinegar

  • 1 tsp brown sugar

  • 1 can condensed tomato soup

  • 1/4 cup chopped parsley

  • 1/2 cup chopped basil

  • 1 tsp onion powder

  • 1/2 tsp celery seed

  • 1/2 tsp smoked paprika

  • Salt and pepper, to taste (I used 1/2 tsp each)

  • 3/4 cup of your favorite bbq sauce (I used Sweet Baby Ray’s) + more to top with before baking

Instructions:

  1. Preheat oven to 350 degrees Fahrenheit and grease a loaf pan or square cake pan.

  2. In a large bowl, using your hands or a wooden spoon, mix all ingredients

  3. Press mixture into your greased pan, and top evenly with more bbq sauce.

  4. Bake for an hour, or until top is well browned.

  5. Enjoy! I like to slice mine and eat on white bread with ketchup for a classic meatloaf sandwich :)
